The key to creating a perfect summer sundae is a delicious ice cream base. Stay Organized

Starring PC® Ice Cream Shop Flavours Watermelon Crunch Ice Cream and topped with the ultimate Canadian sweet, PC® 100% Pure Light Maple Syrup, this scrumptious dessert is easy to assemble and even easier to enjoy.

INGREDIENTS:

½​​Watermelon

4 scoops​PC® Ice Cream Shop Flavours Watermelon Crunch Ice Cream

12 leaves​Fresh mint, minced

4 Tbsp​PC® 100% Pure Light Maple Syrup

METHOD:

1. Peel the watermelon and cut 8 equal squares, 3 x 3 inches.

2. Spread an even layer of PC® Ice Cream Shop Flavours Watermelon Crunch Ice Cream on one side of the watermelon square and top with another square of watermelon to form an ice cream sandwich.

3. Reserve the sandwiches in the freezer.

4. When ready to serve, drizzle with maple syrup and top with a pinch of mint.

Chiptole Taco Salad

INGREDIENTS

12 cups Chopped Romaine Lettuce Hearts
1 pkg PC® Grape Tomatoes, halved lengthwise
1 cup Canned Black Beans, drained and rinsed
1 cup Corn Kernels
¾ cup Red Onions, thinly sliced
½ cup Green Onion, thinly sliced
½ cup Fresh Coriander, chopped
1 ½ cups PC® Monterey Jack Cheese with Jalapeno Peppers, grated
1 bag PC® Chili Lime Flavoured Tortilla Strips
⅔ cup NEW! PC® Chipotle Ranch Dressing
1 Avocado, pitted, quartered lengthwise and sliced

METHOD
INGREDIENTS
Toss together lettuce, tomatoes, beans, corn, red onion, 1/4 cup of the green onion, 1/4 cup of the coriander and the cheese.
Transfer to travel serving container with lid and transport to picnic destination.
Top with remaining green onion, coriander and tortilla strips and dressing once at picnic destination. Replace container lid and shake to combine. Remove lid and garnish with avocado.

TIP: Bring chopped barbecued chicken in a separate container for guests to top their salads with if desired.
