The month of May, days away, is a reminder that BBQ Season is back!!!  Since the warmer weather is beginning to thaw out our winter state, it’s time to get outside again, and BBQ like crazy!!  I love to BBQ; don’t you?

At our house, the May 2/4 weekend is the most important weekend of the year.  It’s like the summer has started, and we HAVE to celebrate by starting up our BBQ!  One thing I have learned, over the years, having the right BBQ utensils can really make your life a lot easier!  If you BBQ your meats, vegetables, and even fruit to perfection, you’ll enjoy your summer meals even more … in fact, if you BBQ your meals throughout the year, you’ll enjoy them year-round!  YUM.

Here’s a Taste of Summer Recipe you might want to try:

A Taste of Summer Chicken Sandwich

Tina Lissemore, Port William, N.S. Grand-prize winner of our 2005 Canada Day Chicken Challenge contest.
This prize-winning grilled chicken sandwich will have your taste buds singing. The tangy Asian-style marinade, with its hints of orange and ginger, make for a flavourful, smoky chicken breast in this light alternative to a burger.
A Taste of Summer Chicken Sandwich
4 boneless, skinless chicken breasts 4
1 tsp orange zest, grated 5 mL
1/4 cup orange juice 60 mL
3 green onion(s), finely chopped 3
1 clove garlic, finely chopped 1 clove
1 tsp ginger, freshly grated 5 mL
1 tsp soy sauce 5 mL
1/4 tsp salt 1.25 mL
4 whole wheat Kaiser rolls 4
– roasted red pepper, thinly sliced, for garnish –
– red onion, thinly sliced, for garnish –
– Romaine lettuce, for garnish –
– mayonnaise, for garnish –
 Cook time : 20 min   Preparation time : 15 min  Serves 4 Serves

1)  In a bowl, whisk together orange zest and juice, green onions, garlic, ginger, soy sauce and salt.
2)  Add chicken breasts; turn to coat.
3)  Let stand for 10 minutes or cover and refrigerate for up to 8 hours.
4)  Grill on medium heat for approximately 15-20 minutes until a thermometer inserted into the chicken reads 165°F (74°C).
5)  Serve on whole wheat Kaiser buns.
6)  Garnish with roasted red peppers, red onions, lettuce & mayonnaise.
Yes, it’s extremely simple to make, super yummy, and probably will become a yearly summer favourite.
